The vinification is undertaken in the domain’s winery which was completely set up in 1999. The equipment remains very traditional, our largest efforts are put towards producing high quality grapes.
Our white wines are not made in barrels, but in vats, and each plot is fermented separately, so as to preserve the aromas of the grape-varieties and the different terroirs we have to offer. It is actually very interesting during tastings to notice the remarkable differences between each plot of vines.
Finally, following the same desire to caracterise the different terroirs that we work with, we do not use any kind of commercial yeast. The fermentations happen thanks to the yeast which is naturally present on the grapes of each different plot. Because of this choice, our fermentations happen very slowly and usually last from 6 to 10 months, which allows us to produce wines that develop very fine and delicate aromas.
